The ingredients needed to prepare Kritharaki:
- Take 2 tbs of Olive oil.
- Take 1 of onion, finely chopped.
- Provide 1 teaspoon of lazy garlic, or 1 clove garlic, crushed.
- Provide 500 ml of carton Passata.
- Take 1/2 of tube tomato puree.
- Get 1 teaspoon of each, thyme, oregano,chilli flakes.
- You need 1 teaspoon of sugar.
- Provide 500 ml of cold water.
- Get 500 gm of Orzo.
- Provide of Salt & Pepper.
Steps to make Kritharaki:
- In a large saucepan Gently fry the onion and garlic in the Olive oil until transparent but not coloured..
- Add Pasata, herbs, chilli flakes and sugar, stir gently..
- Add water and tomato puree, stir again, add Orzo, stir, bring to boil, cover with lid, reduce to gentle simmer..
- Cook for 15-20miutes, stir occasionally. Check Orzo is cooked..
- Remove from heat, allow to stand for 5 minutes, do not remove lid..
- Stir, sauce should coat back of spoon. Season with salt and pepper(to taste) Serve with Greek bread..
In a large pot, heat olive oil over medium heat and add the ground beef. Pound the beef with a spoon to break up into chunks. Season with salt, pepper, cinnamon and oregano, and brown the beef. Add onions and garlic and cook until onions have softened and stir continuously. This is an easy version of the classic dish Giouvetsi.
